Blog mostly about life on our little homestead in Ontario, Canada, where we are raising Shetland sheep, chickens, ducks, geese, quail, amongst others, all under the watchful eye of our Maremma sheepdog. But also about fostering cats and dogs, exploring Ottawa, with maybe a little bird watching, cooking and photography thrown in for good measure!

Looks good. Will try it. I love to try new recipes and thankfully my husband is willing to try anything. We haven't found very many things that we won't eat. We are now trying bread from the Artisan bread Book, making bread in 5 minutes a day, keeping dough in refrigerator and making when we want a loaf. So far what we have tried is very good.

I really don't know whether this would make this a soaked bread. As far as I can tell it it just to let it rise again before baking.

Wow, it looks perfect. Would letting it set(as the recipe says) make it a soaked bread, so that it eliminates the phytic acid in the wheat?
