We wanted to make a shepherd’s pie but the lamb that went into our freezer wasn’t very big so we don’t have a great deal of meat, and not really any that we would want to grind into mince. But we do still have a fair bit of the grass fed beef we bought last year, so we decided to compromise and have cottage pie.

We have a large bag of frozen mixed veg that we bought who knows how long ago, and other things in the pantry like gravy powder, that we wanted to get used up, so Steve came up with the following recipe. Let me tell you it was tasty!

RECIPE
Cottage Pie
- 1 lb Lean ground beef
- 1 medium onion (finely chopped)
- 1 cup stock
- 1 (5½ fl oz) tin of tomato paste
- 1 tbs beef gravy powder (to taste)
- 1 tbs chicken gravy powder (to taste)
- 2 tbs Worcester Sauce (to taste)
- 1 ½ cups frozen mixed vegetables
- 1 tbs Vegetable oil
- Salt
- Pepper
- 1 – 1 ½ lbs Potatoes
Whilst browning the ground beef in a skillet, sauté the onion in a large pan with the vegetable oil. After the meat has browned add this to the sautéed onion. Add the stock, tomato paste, mixed vegetables, salt, pepper and the gravy powders. Let this simmer for 15 – 20 minutes stirring occasionally.
In a separate pan boil the potatoes, drain, and mash.
Spoon the meat mixture into an oven proof dish, top with the mashed potato and place in a preheated oven (350) for 20 minutes.
For some variation I boiled some carrots with the potatoes to make more of a root vegetable mash, I also added a few ounces of cheese to the mash and topped the potato with some as well.
