Soup & chips

So Thursday evening I found myself trying to figure out what my Fight Back Friday post should be about, and what we should have for dinner, and came to the conclusion – soup and chips!

We are still keeping our grocery shopping to a minimum which means that we need to be a lot more inventive when it comes to dinner time. This has really been a blessing as it means we are really thinking about what we are eating, trying new things and enjoying creative kitchen time.

Even though we are keeping our grocery shopping minimal, Steve has to visit our local grocery store a couple of times a week to collect pig food. The door to the produce department has the reduced shelf right beside it, and last time he was there he spotted some tomatoes and sweet potatoes.

So when checking what was in the pantry I found tomatoes and was reminded of a recipe I had seen and really wanted to try – Tomato Basil Soup. But what to go with it? Well also in my ‘to try’ list were these Warm and Cheesy Sweet Potato Chips.

We made the soup with fresh rather than tinned tomatoes, and the chips with cheddar as we had no Parmesan. I think perhaps we didn’t do a very good job of blender-ing the soup as the consistency was a little weird, but it was tasty. The chips were a little greasy, possibly because of the cheese or because we had to use vegetable oil as I used the last of the olive oil in the soup. But they were super tasty and this recipe is certainly a keeper.
